About Us The Marlon Abela Restaurant Corporation “MARC” was established in late 2001 by Marlon Abela to create a global restaurant group dedicated to the high quality restaurant market. To achieve this, the corporation’s strategy is to develop, acquire and roll out restaurants throughout Europe and the US. The Greenhouse in Mayfair was the second acquisition by MARC following the purchase of Morton’s, Berkeley Square, in April 2002, the private members’ club opened after a complete refurbishment in April 2004. The beginning of September 2004 heralded the opening of London’s first true Kyoto restaurant – Umu. Our restaurants and private club offer the ultimate employment experience.
UMUUmu is Japanese for "born of nature", which reflects the menu's emphasis on true provenance: wild fish flown in from three oceans, indigenous Japanese vegetables like red carrots and Kyoto aubergines, even especially soft water from Japan for the chef's tofu. Under the expertise and guidance of Ichiro Kubota, Umu's Executive Chef and Aurelien Pottier, Umu's Restaurant Manager all employees receive the highest quality of training and development. Previous Japanese cuisine and service knowledge is not essential for this position. In January 2005 Umu was awarded its first Michelin Star. MORTON'SFollowing an extensive transformation of its four floors, incorporating private dining, bar, restaurant and meeting rooms Morton's club opened in April 2004. Morton's offers the highest level of luxury service, quality produce and products in all of it departments. Under the guidance and expertise of Yvonnick Lalle, Head Chef and John Davey, General Manager all employees receive the highest quality of training and development. GREENHOUSELocated in the heart of fashionable Mayfair, the Greenhouse offers the ultimate fine dining Rising Two Michelin Star experience. Under the expertise and guidance of Antonin Bonnet, Executive Head Chef and Jean-Marie Miorada, Restaurant Manager all employees receive the highest quality of training and development. The menu at Greenhouse is classical with contemporary twists. Jean-Marie is passionate about the level of discreet service that his team provides - "Our service is all about atmosphere and ambience. It is so good that you don't realise it - there's no better compliment than that". The Greenhouse was named as The BMW Square Meal Restaurant Of The Year 2004.
